EASTER BUNNIES
Easter recipe by Nine News Regional

As a child, Nicole would make these delectable
marshmallows with her mum and sister at Easter time.
One quick and simple treat for the sweet tooth in all of us,
this recipe is perfect to be shared with friends and family.
Ingredients :
Method :
• 2 cups sugar
• 1 cup boiling water
• 2 tbsp gelatin
• 1 tsp vanilla extract
• 2 cups coconut
• Pinch of salt
• Food colouring
• Olive or other oil spray
• Bunny or other Easter-themed moulds
1. Dissolve the gelatin in boiling water.
2. Add sugar to a separate bowl and add gelatin mixture. Mix for 10-15 minutes or until
marshmallow is very thick and white.
3. Add vanilla and salt to mixture whilst still mixing.
4. Use oil spray to grease moulds, then spoon in mixture and smooth top with a knife
or spoon
5. Place moulds in the fridge for about an hour, or until solid
6. Place coconut in a snap lock bag
7. Dissolve food colouring in a few drops of water, then pour into bag
8. Seal the bag, and shake until coconut is uniformly coloured
9. Remove marshmallow from moulds, and cover with coconut
10. Enjoy!
