closely with Mr Jack Lau, the Master Chef for both dining concepts at NSRCC Changi. Chef Lau, who
has 25 years of experience remarked, “When I was tasked to oversee and plan the menu for NSRCC
Changi, we factored in the requirement that service needed to be quick for the golfer-on-the-go at the
café, whilst at the same time catering to restaurant patrons who would have more time to spare and who
were looking for finer delicacies for family and friends.”
Both Chef Tan and Chef Lau strongly believe in the saying, “Health is Wealth”, and put this into practice
through their cooking by ensuring that the menus planned for both dining concepts at NSRCC Changi
do not incorporate use of any monosodium glutamate (MSG). To bring out the flavour in all the dishes
during the cooking process, they carefully blend an array of spices to ensure that the food is flavoursome
without the use of taste enhancers. Explaining their service philosophy, “We want our patrons to enjoy
the food without having to worry about unhealthy ingredients being used, and savour quality and fresh
items on our menus.”
Despite planning menus for both dining concepts with an array of choices, both Chef Tan and Chef
Lau have their personal favourites, “At Passion Cafe, we recommend the Hokkien Mee, Chicken Rice
and Nasi Lemak, as it’s quick and delicious! For Fu Lin Men Seafood Restaurant, we suggest trying the
seafood dishes such as the chili crab, the Sizzling Pork Cartilage with Black Pepper Sauce and Peking
Duck, as well as our Dim Sum.”
To provide more choices, both chefs are planning to introduce special dishes as additions to their usual
menus, “We want to ensure patrons at both our outlets have something to look forward to each time they
dine with us, and also hope to develop a strong bond with the members of NSRCC together with their
families and friends so we have regular and happy customers all the time.”
