Practising Sustainability at
The Sky Bistro located at NSRCC Sky Range
is founded by a group of golfing kakis who
wanted to create an interesting go-to place
for good food and drinks. Well, what better way
to do so than over food and wine! At the same
time, the bistro builds its business based on
sustainability, development and growth, which
can be seen through its three main initiatives.
Protecting the environment
As part of its commitment to protect the
environment, Sky Bistro uses takeaway packaging
that is made from biodegradable paper and does
not provide plastic straws. Additionally, the F&B
outlet separates its recyclables from waste, and
reuses supply boxes, bottles and tins wherever
possible.
Low to no food waste
Sky Bistro is aware that cooking in a commercial
environment usually entails a fair amount of
wastage, thus it deliberately limits the quantity
of its food items. By doing this, the chefs at Sky
Bistro cook in small batches with minimum food
wastage. This also helps to ensure that the food
served is fresh and the turnover is quick.
Farm-to-table cooking approach
Sky Bistro is an advocate of the “eat fresh”
concept, thus the farm-to-table cooking approach
(at NSRCC Sky Range, Level 5)

is practised. The bistro receives fresh produce
from suppliers daily and use them immediately
to prepare dishes for the same day. Its chefs are
trained to use fresh products to bring out the finest
flavors of each dish for diners to enjoy.
Furthermore, all of the food items at Sky Bistro are
prepared in-house and do not contain MSG. For
instance, their burger patties, meatballs, soups
and sauces are handmade from scratch.
With all these practices in place, diners can
be assured that Sky Bistro is serious about its
food and is very mindful of what goes on your
plate. Their chefs are also open to feedback and
suggestions, so do share your thoughts with them
