• 4 Sweet Potatoes
• 1 Tbs . Cinnamon
• Juice of 1 Orange
• 1 Carrot , diced
• 1 / 4 Cup of Fresh Pineapple cut into bite-sized pieces
• 1 / 4 Cup of Pecans , chopped

Directions :
Bake sweet potato at 350 degrees F till tender . Cool slightly and remove skins . Mash with cinnamon and orange juice . Place in a casserole dish . Top with pineapple and pecans . Bake at 350F until topping starts to turn brown .
