This vibrant prawn cocktail salad is one of Justine’ s favourites for a summer party.“ I usually focus on an entree,” she explains.“ It’ s the first thing people taste and I want to make it the best.” Drawing on her memories of fresh prawns eaten by the seaside on a roll with crisp lettuce and avocado, she brings the same flavours to an elegant salad. It’ s a dish that’ s made to move.“ Most elements can be prepared ahead of time,” Justine says.“ The sauce can be made in advance and popped into a jar and the prawns can be peeled the day before and stored in an airtight container, ready to be arranged on the freshly made salad. It’ s so easy and so impressive.”
