COOK’ S NOTE
Cook the curd slowly so the cornflour dissolves – this will also prevent a grainy texture. Strain curd through a fine sieve if it’ s a little lumpy. Refrigerate leftover curd in a jar for up to 1 week and use it on scones, pancakes or crumpets.
