Sweet and smoky glazed ham

Time: 1 hr 25 mins Serves: 20
• 1½ cups orange marmalade
• ²/ ³ cup brown sugar
• ¹/ ³ cup( 80ml) bourbon
• ¹/ ³ cup( 80ml) barbecue sauce
• 2 tbs Southern-style seasoning
• 10 – 12kg whole ham leg
• Whole cloves, to decorate

1. Preheat the oven to 180 º C( 160 º C fan-forced). Combine marmalade, sugar, bourbon, sauce
and seasoning in a bowl.
2. Using a small sharp knife,
carefully cut through the ham rind 10cm from the shank end. Working at the opposite end to the shank, run your thumb between the fat and rind to peel back the rind and remove. Score the fat gently in parallel lines or a diamond pattern.
Decorate with cloves.
3. Place the ham on a wire rack
in a roasting pan. Add 1 cup water to the pan. Spoon one-third of the glaze over the ham, spreading to coat evenly. Bake for 45 minutes to 1 hour, spooning over more glaze every 15 minutes, until golden and
caramelised.
4. Stand for 10 minutes to cool
slightly. Serve ham drizzled with some of the pan juices, if desired. >
