’ m a huge fan of the holiday season. It’ s when we come together as a family and really enjoy the labours of another busy year.
I always draw the short straw when it comes to the celebratory lunch, whether it’ s shucking oysters, popping champagne, or throwing a slab of beef on the barbecue. Luckily, I enjoy my time in the kitchen; it’ s where I feel the most comfortable and creative.
This year, I’ ve opted for Costco’ s Angus Reserve verified black angus Kirkland Signature Grainfed Australian Beef Rib Eye Roast. What makes this the ultimate festive cut is not only the way it presents at the table, but also the simplicity and temperature consistency via a reverse sear: several hours in the oven at 125 ° C( 110 ° C fan-forced) and then finished in a very hot oven or over the barbecue. I highly recommend investing in a meat probe if you don’ t already have one; it will certainly help when mastering meat temperature.
Angus Reserve is known for its consistent, luscious marbling, which keeps the meat moist as it cooks. It’ s dramatic, delicious and my way of showing up for the family – but secretly my way of getting out of the dishes. Happy festive season!
