“ We’ re realising that we have some of the best produce in the world,” says Guy Turland, a chef known for championing local food and an active Australian lifestyle.“ Australian Christmas is special because it’ s summer and the produce is light, fresh, quick and simple. We’ re seeing what’ s local and seasonal and looking to put that onto our plates.”
For Zhang, a no-brainer is shifting desserts away from hot-and-heavy holiday mainstays, to lighter, more modern creations that more closely match the Australian palate.“ Everyone is just so busy, so we serve up dishes that our family actually enjoys,” she laughs, adding that her own family tradition is a Japanese-style Christmas strawberry shortcake.

Make it memorable
But while the modern feast is becoming more casual, Moran says presentation is still key to the Aussie Christmas, no matter what you’ re serving.
“ I make sure that the turkey is whole and the ham is already glazed, so you get to see it and celebrate it, and then I slice it up. It’ s the perfect time of the year to go all out.”
