Ham with Christmas pudding glaze

Time: 2 hrs 30 mins Serves: 8 – 10
• 1 whole leg ham( approx. 10kg)
CHRISTMAS PUDDING GLAZE
• Juice and zest of 1 orange
• ¼ cup finely chopped glace ginger
• ½ cup finely chopped pitted dates
• 1 cup mixed dried fruit
• 2 tbs brandy( optional)
• 75g butter
• ½ cup honey
• ½ cup soft brown sugar
• ½ tsp mixed spice
• ¼ tsp ground cloves
1. Combine the orange juice and zest with the ginger, dates and dried fruit, a cup of water and the brandy( if using) in a small non-reactive saucepan and stand for 30 minutes.
2. After 30 minutes add the butter, honey, sugar and spices, place the pot on medium heat and bring to a simmer. Simmer for 10 minutes then remove from the heat and allow to cool.
3. Remove the skin from the ham, making sure to keep as much of the fat as possible attached to the meat. Score the meat and brush liberally with the glaze.
4. Heat your oven to 170 ° C( 150 ° C fan-forced). Brush the ham with the glaze and bake in the oven for about 1 hour and 30 minutes, continuing to brush with the glaze every 20 minutes until a thick, caramelised and shiny coating is formed and the ham is warmed through. >
