Ingredients
• 2¼ c low-sodium chicken stock
• ½ tsp dried basil
• ½ tsp dried oregano
• ½ tsp dried thyme
• ¼ tsp salt
• ¼ tsp garlic powder
• ¼ tsp pepper
• ¾ c lentils

• 1 onion, chopped
• 2 c white mushrooms, sliced
• 1 red bell pepper, chopped
• ½ c wild rice
• ½ c dry white wine
• 1 c nonfat mozzarella cheese,
shredded (divided into 2 half cups)
• ½ c pimento, chopped
Directions
Preheat oven to 350◦F. Combine all the
ingredients except ½ cup of the mozzarella cheese and pimento in an ungreased 1½ quart casserole dish with a
tight-fitting lid. Cover and bake for one
hour, stirring twice. Uncover casserole
and top with remaining ½ cup cheese
and pimento. Bake until the cheese is
melted, about 5 minutes.
