Serves 23; Serving Size: ¼ cup healthy living Ingredients 2-3 roasted red peppers, water packed, drained and diced (these can be found packed in a jar in the grocery section) 1 red onion, finely diced (more or less, depending on your taste) ½ of 14.5 oz. can Muir Glen fire roasted tomatoes, crushed* ½ bunch of arugula, finely chopped Arugula Tapenade Tapenade is an olive-based spread common in Mediterranean cuisine. The most traditional recipe involves only a few ingredients, including black olives, capers, olive oil, and anchovies that are mashed together into a thick paste. That paste can then be spread on toast, used to flavor meats, or eaten as a dip. The dish dates back to Roman times, but is popular all over the world today, and comes in many different variations. Arugula tapenade is a very different version of the typical recipe. Adding arugula, peppers, and vinegar while decreasing the amount of olive oil used helps to decrease calories per serving. This is absolutely delicious and will soon become your signature dish. Serve it as an appetizer or ladled over chicken or fish. 1 cup pitted kalamata olives, drained and finely chopped ½ cup extra virgin olive oil ¼ cup red wine vinegar ¼ cup balsamic vinegar Fresh cracked black pepper (to desired taste) ½ tsp sugar (if desired) Directions Mix all the above ingredients well in a bowl, cover and chill in refrigerator for at least 2 hours. Serve with crostini or your favorite bread broken into pieces. This tapanade is fabulous ladled over grilled or baked fish or added to your favorite pasta sauce.
