Faye's Classic Christmas Plum Pudding Recipe
Ingredients:
1 and 1/2lb, mixed fruit
2 cups dates (chopped to sultana size)
2 cups brown sugar
2 tblsps plum jam
4 oz butter
2 cups water
4 tsp carb, soda
4 cups plain flour
2 tsp mixed spice
1 cup rum
Method:
Place first 6 ingredients into saucepan and simmer until syrupy. Remove from heat.
Add bicarb soda and stir well. Allow to cool.
When cool add plain flour, mixed spice and rum. Stir well.
Spoon into steamer leaving at least an inch or 2 space at top. Cover with 2
or 3 sheets of plastic wrap tied securely around rim of bowl and steam for 4
hours large pudding and 3 hours for medium - small size. Check water level
in saucepan regularly and if necessary, top up with boiling water.
When cooked, remove pudding from bowl, allow to become cold, then wrap pudding
in glad wrap or alfoil and store in fridge or freezer.
This mixture makes 1 large or 2 medium or 3 - 4 small puddings.
