The hospitality management family at Saint Joseph University, Institut de Gestion des Entreprises, USJ-IGE was very
dynamic during the Chef Paul Bocuse Week celebration. The Chef Paul Bocuse Week also coincided with the Beirut
International Cooking Festival and the Salon du Chocolat, which took place from November 17th to November 19th.
FASHION SHOW
During the chocolate fashion show, Chef
Charles Azar made a chocolate dress,
involving a team of volunteer students.
The team worked till 4a.m. to finalize a
dress that provoked awe and admiration.
INTERNATIONAL PASTRY CONTEST
In parallel, students participated to the
international pastry contest organized
within
the
Worldwide
Alliance.

Antonios who realized the “Golden
Croustache cake” entremet and
qualified for the online final!
VISIO CONFERENCES
On November 16th, USJ-IGE invited the students and professionals
to attend the visio conference conducted by Maxime Michaud.
The conference was followed by a cocktail and time to network. A
second conference was organized with USIL Peru on the theme of
a culinary exchange on Peruvian and Lebanese cuisines, with Chef
Rosa Cabrera Masalias and Chef Kamil Bouloot a few days after.
CULINARY DEMONSTRATIONS
Chef Kamil Bouloot took part of a “cook for charity culinary
demonstration”. The meals were sold to clients and the proceeds
donated to charity causes. On Thursday 24th, Chef Joe Barza
offered a culinary demonstration on oriental variations on the
canard à l’orange mixing the traditional canard à l’orange with
Lebanese flavors. Students discovered a passionate professional,
generous with recommendations and insights.
CONFERENCE ON PAUL BOCUSE
Following the demonstration of Chef Barza, a team of students
made a presentation on Chef Paul Bocuse, his life and work. The
presentation was followed by a debate animated by a student,
exploring various quotes from Chef Paul Bocuse and how they
related to a career in hospitality.
The online picture contest
From November 14th to November 23rd, an online picture contest was set up
through the Worldwide Alliance Facebook page. As part of the Chef Paul
Bocuse Week, participants had to illustrate "Happiness is in the kitchen" with
a picture and explain why it perfectly reflected the famous sentence of Paul
Bocuse. In total 21 persons from the world participated to the online picture
contest. After weeks of likes and shares on Facebook, a jury evaluated the 5
pictures which received the more of likes. The jury assessed the explanation
as well as the creativity, and announced the winner on November 25th.
