On November Monday 14th, Universidad San Fransisco de Quito - College of Hospitality, Culinary Arts and Tourism
(CHAT) started celebrating the Chef Paul Bocuse Week 2016. A tribute to the life of a great culinary master, shaping
academically his work and values through gastronomy in those who love cooking, took place in Ecuador and other
Alliance members campuses during two weeks.
CONFERENCES
Throughout the first week of celebration, several conferences were held for teachers and
students. On November Monday 14th, Miguel Ponce, Esteban Tapia, Mauricio Acuña, Rodrigo
Pacheco, Enrique Sempere and Federico Trujillo performed different master classes open to
public in Calderón de la Barca Theater.
CULINARY DEMONSTRATIONS
On Tuesday 15th, a demonstrative
class was carried out by Chef Blaise
Volckaert from Institut Paul Bocuse
in Guayaquil, Ecuador. By Thursday
17th, Chef Volckaert gave another
master class in Quito.
GALA DINNER AT MARCUS
On Friday 18th, Chef Volckaert was the
protagonist of a unique dinner in
Marcus, one of the restaurants in the
Ecuadorian university. With the help of
culinary students of USFQ, a special
menu was served to guests.
INTERNATIONAL PASTRY CONTEST
On Wednesday 16th, the international
pastry contest took place in the campus,
performed by culinary art students.
Congratulations to Maria Gracia and
Gabriel Quevedo who realized the
Gâteau d’Or entremet and qualified for
the online finale.
Haaga Helia University of Applied Sciences- Finland
The 2nd year culinary arts students of Haaga Helia University of Applied Sciences were in charge of planning the Chef
Paul Bocuse Week in the Finnish campus. Among events, students planned an exhibition on Chef Paul Bocuse in
collaboration with the library and a special lunch were served at the student restaurant. Different teams also
participated to the international pastry contest organized within the Worldwide Alliance.
SPECIAL LUNCH
From November 16th to November 18th, the student restaurant
of Haaga Helia University of Applied Sciences served lunch in
the accordance with the theme that was planned by the
students: celebrating Chef Paul Bocuse.
INTERNATIONAL PASTRY CONTEST
The international pastry contest was organized in Haaga Helia
campus on November Monday 14th. In the final there were 5
competing teams. The winning team consisted of two
students: Asta Rouhelmaa and Milla Lindroos.
Congratulations to them who qualified for the online final
step with their Chocolate-cherry cake entremet.
