About me

I like baking because I enjoy creating different types of food. As well as this I enjoy baking because I like using different tools and try to experiment with different techniques.

Baking with Nia

Ingredients

4 free-range eggs

225g/8oz caster sugar

225g/8oz self-raising flour

2 tsp baking soda

225g/8oz soft butter at room temperature, plus a little extra to grease the tins

2 tsp vanilla extract

Milk, to loosen if needed

1 tbsp of icing sugar

Your favourite kind of raspberry or strawberry jam

Whipped double cream (optional)

Treat yourself this half-term with this delicious Victoria sponge....

Preparation

Preheat the oven to 180C/350F/Gas 4. Grease and line 2 x 18cm/7inch sandwich tins. (Use a piece of baking paper to rub a little butter around the inside of the tins until the sides and base are lightly coated then line the bottom of the tins with a circle of baking paper.
