An Italian tradition exists on Lake Ontario’ s southern shore, where the late homebuilder Andrew Calaruotolo planted some vines as a hobby in 1974. Today, Casa Larga thrives as a family-owned business, producing the country’ s top ice wines. To make ice wine, grapes are left on the vine through the harvest season and then handpicked in late December or early January when the temperature falls below freezing. The grapes are pressed hydraulically and fermented cold.
