Culinary Institute of America-trained chef Bryan Graham and his wife Dahlia left their careers in New York City to return to their
native Hudson Valley and start a chocolate company in 2008. Because they needed to stand out from other chocolatiers, they began
making their chocolate from scratch, using raw cacao beans purchased directly from South American farmers. Roasting cacao beans is
arduous process, so they built a miniature chocolate factory in their apartment to learn how. Today their company, Fruition
Chocolate, creates international, award-winning, single-source chocolate bars that are sold around the world as well as at their
