A BURST OF GREEN

Teresa Cutter , The Healthy Chef shares some delicious summer lunch ideas and shows that , when done right , you can make friends with salad !

Green peas with leaves & avocado

This salad will instantly make you feel ten years younger after eating it ! The ingredients have been specifically selected to boost protein , healthy fats and antioxidants for healthy glowing skin and a lean toned physique .
Serves 4
Ingredients
1 red onion , finely sliced 1 lemon generous pinch of sea salt 2 heads baby gem lettuce or baby cos lettuce 250g podded green peas 2 avocados
DRESSING 1 tablespoon apple cider vinegar 2 teaspoons seeded mustard 1 teaspoon pure maple syrup 60ml ( ΒΌ cup ) extra virgin olive oil
Method
1 . Whisk dressing ingredients until creamy and emulsified .
2 . Combine onion , the juice from 1 lemon and sea salt into a smaller separate bowl , then massage through the onion . Set aside for 15 minutes to soften .
3 . Arrange lettuce leaves onto a serving platter . 4 . Blanch peas for 1 minute in boiling water , then drain .
5 . Scatter peas over the lettuce and arrange over sliced avocado .
6 . Spoon over the dressing , followed by the red pickled onion .
7 . Serve and enjoy .
