Turkey Vegetable Soup
Ingredients for Broth:
Whole turkey carcass
(what is remaining after a Thanksgiving or dinner feast)
Sea salt
Fresh ground black pepper
Stock Preparation:
Place whole turkey carcass into a large stock pot (16qt works
well for a turkey) and fill with water to almost cover. Season

after dinner, grab a large stock pot instead and get ready to prepare
the best nutrient-dense soup you have ever tasted.

stock through a colander into a large pot and return to stock
pot and refrigerate overnight. The stock will become gelatinous
with a layer of fat on the surface. Scoop the fat off the top and
discard. What remains is the stock base for your soup.
Turkey Soup Ingredients:
Turkey stock as prepared above
Shredded turkey meat picked off the bone (about 1lb)
Red potatoes
Organic garbanzo beans (15oz can), drained
Cauliflower
Organic baby carrots
1tsp ground thyme
1tsp fresh ground black pepper
Sea salt to taste
Organic herbal seasoning blend
Soup Preparation:
Place a large soup pan on the stove and fill
to
full with
turkey stock. Place the stove top heat to medium/high and add
shredded turkey meat, chopped baby carrots (2 large handfuls), chopped cauliflower (1/2lb is sufficient), drained 15oz can
organic garbanzo beans, and about 8 small red potatoes that
have been washed and chopped into 4ths with skin on. Stir all
the ingredients together and sprinkle with fresh ground pepper,
a sprinkle of salt and organic herbal blend. Bring the soup
just to a boil, and reduce heat to simmer for about an hour. As
the soup cooks, feel free to add more salt to taste. Ladle into
bowls and serve.
Note: Feel free to deviate from the recipe by replacing and
adding your favorite vegetables to create your own soup
sensation.
