Simple Beef Tartare with Lemon and Parmesan ( shown here with served on potato palettes with paprika aioli )

INGREDIENTS ( for 4 people )
PREPARATION
250grs beef tenderloin 4 lemons 1 bunch fresh chives 1 teaspoon Tabasco sauce 30 ml extra virgin olive oil 60grs Parmesan cheese Salt Pepper
Slice the tenderloin into fine cubes Zest the lemons . Squeeze out the juice Chop the chives thinly Grate the Parmesan cheese
In a mixing bowl , gently combine the tartare together with the extra virgin olive oil , lemon juice , lemon zests , chives , Tabasco sauce , salt , pepper and grated Parmesan cheese
