National Dish Rice & with Peas fish Every Caribean island has its own national dish. Some require elaborate preparation while others are very simple to make. Anguilla’s national dish of rice and peas is one of the easiest meals to prepare. All the ingredients you need are rice, pigeon peas and your favourite seasonings. You can use canned pigeon peas, but if you prefer to use dried peas, soak it overnight to soften. When cooking, add a bit of lime juice and black pepper to your taste. Serve it with fish.
