Chef Refer Leonce

In 2015, Refer was honored with leading the St.
Lucia team as its captain, to the Miami competition,
where they returned to St. Lucia with team silver
medals. In 2016 the team received their first team
gold medals. Proud achievement!
He describes his style of cuisine as a fusion of
French and Caribbean. One of his favourite dishes
to prepare is Pan Seared Tuna with avocado and
tomato salad, served with a sous kaye sauce made
of fresh herbs and vegetables.
