Red Bean Soup with Dumplins | Mélange Travel & Lifestyle Magazine
INGREDIENTS 1 bag red beans 2 pound salt beef (or smoked sausage) 1 medium sweet potato 10 small white potatoes 1 large onion Chives, thyme salt 1 gallon water For the dumplins: 2 cups flour, 1 tsp. salt, water METHOD Soak red beans in water overnight. Soak salt beef in water overnight. Cut salt beef into slices. Combine beans and beef and boil until the beans are soft. Add sweet potatoes, onion, chives and thyme. Continue boiling. Mash sweet potato to thicken the soup. Make dumplins by combining flour and salt. Add enough water to make a dough. Knead well until tight. Roll out, flatten and cut in circles. Put them into pot and let cook for 20 minutes more. Add salt to taste.
