PREPARATION

Conch Ceviche

Ingredients

1 lb fresh conch , cut into bite-sized pieces Juice from 2 lemons
Juice from 2 limes 2 ripe tomatoes , chopped into small pieces
1 medium red or white onion , finely chopped 1 large green bell pepper , chopped into small pieces
1 / 4 cup of fresh cilantro , finely chopped
Pepper sauce , chopped scotch bonnet pepper or white pepper to taste
Salt to taste

PREPARATION

In a bowl , combine the conch with the lime and lemon juice . Let it rest for an hour , stirring occasionally .
Add the remaining ingredients . Stir thoroughly . Cover and refrigerate overnight .
Before serving , add chopped tomatoes , pepper and salt .
Serve with chips ( plantain or tortilla )
