Mofongo.
This dish of sauteed or fried green plantains, mashed
together in a mortar with garlic, bacon and seasonings can be found on the menus
of many restaurants in the Dominican Republic. The dish is African in origin brought
to the Spanish-speaking Caribbean islands by African slaves. It is also prepared, with
slight variations, in Cuba and Puerto Rico.
