THE CUP SAKE REVOLUTION
SAKE TASTING EVENTS
The week kicked off with an exclusive press event, featuring our full cup sake menu and sushi by
former Zuma head chef, Endo Kazutoshi. The Hox Cup Sake Bar was open to walk-in visitors
but we also held a number of ticketed tasting events during the week. These events featured
sake matched with food by different London producers and restaurants to demonstrate that sake
could be enjoyed with a range of different food types, and not just Japanese food. A uniquely
British sake tasting event featured small dishes by chef Mark Hix matched with sake from
DJ Richie Hawtin’s ENTER.Sake range. Guests were able to taste four different sakes from
ENTER.Sake paired with modern British food specially created for the event - for instance,
Peruvian Gold bitter chocolate mousse was enjoyed with ENTER.Sake Kuzuryu junmai and
steak tartare was perfectly matched with ENTER.Sake Black honjozo.
The Japan Society event was particualy popular, and members learned about sake whilst dining
on beautiful bento by Atsuko’s Kitchen. Natsuki and cheese expert Kiko Ito led a sake tasting
matching Gekkeikan sake with cheeses from La Fromagerie, such as burrata with wasabi and
soy, and an event exclusive - sake-washed Langres cheese. Mast Brothers chocolate was matched
with mature sake, whilst H. Forman smoked salmon and fish was paired with sake from Kikusui
brewery. Sake expert Honami Matsumoto guided visitors on a sake journey, exploring how the
shape and material of different vessels affected the taste of sake.
