It doesn’t just stick to the old traditions, but touches on a new world where it is necessary to have the desire to create a product that can be accepted. The most crucial thing for Japanese sake is to have a new image and new audience, I believe. My mission being outside of Japan is to watch the future of Japanese sake by connecting the industry and the voice of the local people so Japanese sake can be accepted by the local people without losing its beautiful essence and heart. That, for me, is to show my love of my home country.’ 今、日本酒 に一番必要なのは、‘New image and new audience’ だと思うんで す。 MUSEUM OF SAKE JOURNAL 15
