Chicken Curry
Serves: 2 people
Prep time: 10 minutes
Cooking time: 30 minutes
Total time: 40 minutes
Ingredients:
2 medium sized chicken breasts, diced into
cubes
1 tablespoon coconut oil
1 tin unsweetened coconut milk
2 green peppers
1 stick of lemon grass
1 tablespoon fresh ginger, very finely
chopped
2 cloves of garlic, very finely
chopped
1 large red or green chilli, very finely
chopped
1 medium red onion
Handful of mushrooms, finely sliced
1 chicken stock cube
Juice of 1 fresh lime
1 tablespoon sugar-free peanut butter
Method:
1. Heat coconut oil in a wok and fry the
onion and chicken until lightly browned
2. Add the chilli, ginger and garlic and
continue to fry over a medium heat until
chicken is cooked through
3. Add the remaining ingredients and
stir well, then cover and leave to simmer
for 20 minutes
4. Serve with cauliflower rice
