L ’ ÉVOLUTION DE NOS HABITUDES ALIMENTAIRES THE EVOLUTION OF WHAT AND HOW WE EAT

Évoluer ou mourir . C ’ est un impératif souvent répété sur le besoin pour les humains d ’ accueillir le changement . C ’ est une belle citation , qu ’ elle soit liée à la biologie , aux affaires ou à la société . Mais que dire de nos habitudes alimentaires ? Une des plus grandes croyances en matière de culture culinaire est l ’ importance de maintenir la tradition et l ’ authenticité . Toutefois , cela semble plutôt loin de la célébration et de la création du changement .

Est-ce que les concepts d ’ évolution et d ’ héritage suivent deux routes totalement différentes lorsqu ’ il s ’ agit de nourriture , ou pourraient-ils en fait se rencontrer , disons , autour de la table ? Ici au Québec , plusieurs signes semblent pointer vers la deuxième option . Ces indications sont particulièrement présentes dans les façons dont certains de nos jeunes professionnels de la gastronomie pratiquent leur métier . L ’ histoire peut coexister avec le changement , semble-t-il , et le résultat est souvent une innovation très savoureuse . g

Evolve or die . It ’ s a frequently repeated imperative about the need for humans to embrace change . It ’ s a good sound bite , whether related to biology , business , or society . But what about how and what we eat ? One of the strongest beliefs in food culture is the importance of maintaining tradition and authenticity . That , however , seems somewhat different from celebrating and creating change .

Do evolution and heritage run on totally separate tracks when it comes to food , or might they actually meet somewhere like , say , around the dinner table ? Here in Quebec , many signs point to the latter . These indications are especially present in the ways that some of our younger gastronomic practitioners are going about their work . History can coexist with change , it seems , and the result is often a pretty tasty type of innovation . gg
