Although the meal isn’t as popular in Brazil as it is in America, executive chef and owner Ilson Goncalves has found spicy ways to revamp American breakfast staples like bacon and omelets. “I’ve added classic Brazilian touches to familiar foods to make them even more delicious and healthy,” he says. The menu includes fresh orange juice for BYOB mimosas, an omelet with Brazilian sausage and collards, Yuca home fries dusted with rosemary, mint, thyme and oregano, and a panini with mozzarella and chicken on Goncalve’s trademark yuca bread. Goncalves, who recently traveled to Morocco to improve his cooking techniques, just released The Samba Montclair Cookbook: Authentic Home-Style Brazilian Recipes and Reminiscences, so fans can bring the flavors of Brazil to their own tables. 7 Park St., (973) 744-6764, sambamontclair.com • SAMBA: Montclair
