SOM TAM (PAPAYA SALAD) “Enjoyed all throughout Southeast Asia, this dish is quite easy to make with only afew ingredients,” says Kaboonyam. “It combines sour lime, hot chili, salty, savory, fish sauce, and sweetness added by palm sugar —another great refreshing dish eaten as alight snack during the day, or as afull meal.” INGREDIENTS (SALAD) 2-3 small Thai chili peppers 3 cloves of garlic ½ cup green string beans, trimmed of ends and cut into ½ inch pieces 1 handful cherry tomatoes ¼ cup of roasted peanuts ½ green unripe papaya INGREDIENTS (DRESSING) 1tablespoon palm sugar* ½ tablespoonsalt Juiceof1lime INSTRUCTIONS Mix ingredients in a bowl and serve. *Palm sugar is available at East West Foodmart in Bloomfield and H Mart locationsthroughout the state. MANGO SALAD “In Thailand, this dish is usually served with grilled shrimp,” says Kaboonyom. “Although we do not serve ours this way, our recipe is found widely throughout Thailand. It’s a simple dish, but its mix of sweet, sour and salty gives it robust flavors. Perfect for ahot summer day, this is a very refreshing dish.” INGREDIENTS (SALAD) 1 cup shredded mango ½ cup shredded green apple 1 cup lettuce ¼ cup red onion ¼ cup shredded carrot ¼ cup pineapple 1 tablespoon scallion INGREDIENTS (DRESSING) 1 tablespoon palm sugar* ½ tablespoon salt Juice of 1lime INSTRUCTIONS Mix ingredients in a bowl and serve. LARB KAI “‘Larb’ isatype of Lao meat salad,” says Kaboonyom. “It is popular in the Isan region of Thailand. The staple ingredient found in every Larb dish is the finely-ground rice powder, which gives the dish its unique texture and flavor. Itisalso commonly served with fresh or raw vegetables and sticky rice.” INGREDIENTS 100g (roughly 3 ½ ounces) mincedporkorchicken ¼ cup red onion 2 tablespoons lime juice 1 ¼ tablespoons fish sauce 1 tablespoon dried chili flakes 2tablespoonsroastedrice powder 2 tablespoons scallions ½ cup mint leaves INSTRUCTIONS Sauté meat with a tablespoon of oil andadd water as neededifit gets dry.
