Kid-Friendly Dessert and Dinner from Alyscia K. McDermott's Kitchen

Easy Peanut Butter (or your favorite nut butter) Cookies

½ cup butter

½ cup peanut butter

½ cup sugar

½ cup brown sugar

1-2 tsp real vanilla

1 egg

½ teaspoon baking soda

1 cup flour

Mix butter, peanut butter, sugar, brown sugar vanilla and egg together. In a separate bowl, measure out and mix flour and baking soda. Add dry ingredients to wet ingredients in mixer.

Bake for 8-10 minutes depending on how your oven runs at 350 degrees.

Tortellini Meatball Soup

For a family of four + and to have leftovers…

Pour two boxes of chicken broth into a pot.

Add 2 cups water and 1-2 chicken bullion cubes for extra flavor. (If on a low sodium diet, skip the chicken bullion and add thyme, sage, a little pepper and natural, unprocessed salt.)

Bring to a simmer and add in about (1 lb of ground beef makes more than enough meatballs) of uncooked meatballs, which will cook right in the soup.

(Hint: If you make them small, they’ll cook faster!)

Add favorite vegetable such as cut carrots, frozen or fresh broccoli, or chopped fresh spinach. (Don’t use frozen spinach…it will be too soggy!)

Simmer for 25-35 minutes and serve with bread or your kiddo’s favorite crackers.
