Black Bean Sausage and Rice

INGREDIENTS 1 can dried black beans , rinsed and drained
1 link of sliced beef sausage or andouille sausage
1 chopped green bell pepper 1 chopped yellow bell pepper 1 chopped orange bell pepper 1 can of street corn , drained 1 medium tomato , peeled , seeded and chopped 2 tbsp vegetable oil 1 chopped red onion 1 minced garlic clove 1 tsp cilantro 2 cups raw rice
DIRECTIONS Heat the oil in a large saucepan . Add onion and garlic , and sauté them until the onion is slightly limp and translucent . Then add the bell peppers , corn and sausage and cook for 5 minutes at medium heat . Add salt and pepper to taste . Mix in the beans , tomatoes and cilantro and simmer for 3 minutes and set aside .
In a separate pan , cook the rice in 3 cups of water , and stir over medium heat until the grains turn milky and opaque . Add the bay leaf . Cover pan , reduce the heat to low and simmer the rice for 20 minutes undisturbed or until tender and has absorbed all the liquid . Allow the rice to cool .
When you are ready to serve , and the mixture of beans , bell peppers , onion , corn , tomatoes , and sausage in a serving bowl over the rice . Can serve cold or warm . Enjoy !
