Ginger-Lime Scallops
INGREDIENTS Lime-Ginger Butter : 5 tbsp softened butter 2 tbsp grated lime zest 1 tsp ground ginger Salt and pepper to taste
2 tbsp olive oil 2 tbsp butter 2 lbs . scallops , patted dry 6 tbsp fresh lime juice Minced parsley
DIRECTIONS
Beat together the ingredients for the lime-ginger butter . Heat olive oil and 2 tbsp butter in a skillet . Add the scallops , and sauté them until they are slightly golden , about 2 minutes . Pour off the fat . Stir in the lime juice and cook 1 minute . Lower the heat and stir in the limeginger butter 1 tbsp at a time . Cook just until a thick sauce forms . Sprinkle with parsley and serve .
Can serve with salmon and veggies .
