Essentially, meat added to a vegetable soup makes an
East Texas stew.
East Texas Stew
INGREDIENTS
• 2 lbs of chuck roast or stew meat
• 4-5 whole ripe tomatoes, blanched and peeled
(tomato sauce, stewed tomatoes are good too)
• 1 large onion, sliced or diced
• 2 potatoes, peeled and cubed
• 1 1/2 teaspoon salt
• 2 teaspoons black pepper
• 6 cups water
• Mixed vegetables (corn, green beans, peas, carrots)

• Brown meat
• Combine browned meat, tomatoes, onion, potatoes,
seasonings & water in a big pot or crock pot
• Cook until all the vegetables and meat are tender
• If using frozen vegetables, add the last few minutes,
stir often to prevent sticking if cooking on top of the
stove
