Modified atmosphere packaging provides an optimum atmosphere for increasing the shelf life and
maintaining the quality of the food enclosed in it by modifying and altering the atmosphere inside the
package. The modification of the atmosphere may be achieved either actively or passively. The active
modification requires replacing the air with a controlled and desired mixture of gases, a mechanism
known as gas flushing. Passive modification process involves respiration of food or metabolism of
microorganisms associated with the food. The package structure normally incorporates a polymeric film,
so that the permeation of gases through the film influences the composition of the atmosphere that
develops. The rate of the permeation of gases depends on the nature of the film and the storage
temperature.
