t started humbly. William
Kent Rathbun got his first
job as a dishwasher at a
Sambo’s in Kansas City at
age 14, having lied that he
was a year older. By age 17 he
was an apprentice at top dining room La Bonne Auberge. It
changed his whole outlook. He
learned what haut cuisine was
and he liked it.
