In this series we are going to
look at mentor of cuisine in Dallas.
A handful of names suggest themselves. One who would certainly
be on everybody’s list is Dean
Fearing, executive chef/owner of
Fearing’s at The Ritz-Carlton Dallas. A feature of the Dallas culinary
landscape for over 30 years, he
originally got public mindshare
as executive chef at The Mansion
Restaurant at The Rosewood Mansion on Turtle Creek. Famously, in Kevin Ascolese, Princi Italia (Dallas)
2007, he upped sticks to open his
eponymous restaurant at The RitzCarlton.
Composing a list of protégés
from this bio alone is challenging
but is unlikely to do him justice
as he was also one of the “Gang
of Four” founders of New Southwestern Cuisine (the others being
Dallas chef Stephan Pyles, Houston
chef Robert Del Grande and cookbook author Anne Lindsay Greer).
The books, public appearances,
cooking classes and TV shows
likely influenced a long, but unfor- Eric Dreyer, Fearing’s (Dallas)
tunately undocumentable, list of
future chefs.
So roll the credits. On the
