going to come their way. They are loyal to your face but destroying
your name behind your back.
I know what I’m suppose to do
This is a very dangerous employee to have in your kitchen. This
individual knows more than you give him credit for. This is the
individual that will leave food sitting out in the temperature danger
zone and when you say something to them about it, they say, “Well,
you didn’t tell me I had to put it up.” This is the individual that won’t do
the right thing on purpose. They know all the rules, and they even
know the classically correct way to do things, but simply wont
because nobody is holding them accountable.
Dumb and don’t know they’re dumb
This individual, who has been with the company for a long time, has
been doing things backwards. Since they’ve never been corrected it’s
become the way to do things. The new guy walks in and questions
him, and it’s suddenly world war three. This individual doesn’t listen to
reason or an explanation. He doesn’t hear anything rational because
they are irrational. “Who are you to come in and tell me I’m doing this
wrong, and I’ve been doing it for ten plus years!” To me, that means
you’ve been doing it wrong for ten plus years. You have to either
transform this individual quickly to do things your way or get rid of
them quickly. This person will spread lies and cause confusion
relentlessly. He doesn’t understand when enough is enough or that
they are taking things over the edge. All this individual knows is
you’re changing things, and they don’t like it. They will do anything
they can to get rid of you.
