Get Going With Great Granola By Ann Ashworth
This tasty , healthy and energising breakfast recipe for granola that will put some serious fuel in your running engine .
They say breakfast is the most important meal of the day , and this recipe will give you – and your running – the kickstart it needs , while fuelling you for the long road ! Also , I ’ m a firm believer that food needs to be delicious , so following a healthy diet shouldn ’ t be a punishment , and eating a hearty and healthy but tasty breakfast is my idea of doig things right in the morning .
Ann ’ s Homemade Granola Variations
Prep time : 5 minutes
Total time : 45-60 minutes Servings : 8-10
Ingredients ½ cup coconut oil , melted 3 cups rolled oats 2 Tbs honey / syrup 2 tsp cinnamon 1 to 1½ cups fruit / nut additions ( see below )
Fruit / Nut additions include :
• Cashews / almonds / raw peanuts
• Goji berries / cranberries / raisins / dried banana chips
• Coconut shavings
• Cacao nibs
• Mixed seeds
• Chia seeds ( Add any combination of additions totalling 1½ cups in quantity )

Pre-heat oven to 150 ° C . |

Grease a large baking tray . |

In a bowl , mix the oats , cinnamon , honey and |
melted coconut oil until well combined . |

Add the fruit / nut additions and stir well . |

Pour granola mixture into the baking tray , |
making level with a spoon . |

Bake until starting to turn a golden brown , |
shifting every 10-15 minutes . 7 . Allow to cool completely before storing in a dry , airtight container .
Notes You can just about add anything to your basic rolled oats granola mix . I prefer to throw a little bit of everything in , but you may prefer to pick two or three flavours ( e . g . cranberries and coconut ) and stick with those .
