Flapjacks to Make You Fly By Ann Ashworth

Try this tasty , healthy and energising breakfast recipe for flapjacks that will power your running .

I

’ m a firm believer that food needs to be delicious , so following a healthy diet shouldn ’ t be a punishment . Also , a little bit of what you fancy , does you the world of good , and that applies to one of my favourite breakfast recipes , for highprotein breakfast flapjacks . As they say , breakfast is the most important meal of the day , and this recipe will give you – and your running – the kickstart it needs !
Ann ’ s Protein Flapjacks
Prep time : 5 minutes Total time : 10 minutes Servings : 8
Ingredients 2 tubs fat-free cottage cheese 2 cups egg whites 2½ cups rolled oats 2 bananas , mashed 2 tsp cinnamon 1 tsp baking powder Blueberries
To Serve Honey Nut butter ( optional )
Directions
1 . Add cottage cheese , egg whites , oats , bananas , cinnamon and baking powder to a high-speed blender and process until smooth .
2 . Place a non-stick frying pan over high heat and spray with Spray-n-Cook .
3 . Once pan is hot , add flapjack mixture using a large serving spoon as a ladle to measure out three to four flapjacks . Allow to cook for one minute .
4 . Add five to six blueberries to each flapjack , flipping over as soon as large bubbles start to appear . Press the flapjacks down slightly to ensure the blueberries are warmed right through .
5 . After two to three minutes , remove the flapjacks from the pan . Stack three to four flapjacks on a plate and drizzle with honey to serve .
Notes
• The flapjack mixture stores well in an airtight container in the fridge for up to five days and can be used as a breakfast or snack later on in the week .
• You could also use this mixture as a healthy waffle option , topped with fresh blueberries and honey .
• NB : Recipe may be halved .
