COOKING — KING PRAWN ROLLS
These King Prawn Rolls are something that we always recreate on the road when we find fresh prawns , especially in locations along the East Coast . One of our favourite places to make these is in Yamba in NSW with fresh prawns of the trawlers and soft rolls from the local bakery .
This recipe has simple and few ingredients and is an easy one to whip together in the back of a cruiser or on the beach . It can take a little patience to peel the prawns and not eat them as you go , but the reward at the end is so delicious . These King Prawn Rolls go down particularly well after a big day in the ocean with an icy cold beverage in hand .

L 1kg cooked king prawns
L 4 Brioche rolls L 1 butter lettuce L 1 avocado L 1 lime L 3 Tablespoon Kewpie mayo

METHOD 1 . Peel , devein and finely chop cooked king prawns and put them into a mixing bowl
2 . Add zest and juice of 1 lime , 3 tablespoons of Kewpie mayo to prawns . Mix to combine .
3 . Half and de-seed avocado and cut into thin slices 4 . Cut brioche rolls in half and toast
5 . Rip a handful of butter lettuce and place on the bottom of the brioche roll . Add ¼ of the prawn mixture , top with a few slices of avocado and finish by adding on the brioche lid .
