PAIRING: GINGER VODKAS WITH SWEET POTATO LATKES Vodka-Ginger Cocktails Ginger Syrup Sweet Potato Latkes YIELDS 2 CUPS RECIPE FROM EPICURIOUS.COM FROM FOOD NETWORK KITCHENS MAKES 2 COCKTAILS INGREDIENTS INGREDIENTS INGREDIENTS 1 lemon 2 cups coarsely chopped fresh ginger with peel 1 pound sweet potatoes, peeled and coarsely grated 3 ounces vodka, any flavor ½ to 1 ounce ginger syrup, recipe follows ½ teaspoon freshly squeezed lime juice Twist of lemon or lime DIRECTIONS • Fill cocktail shaker or small pitcher with ice. Add the vodka, ginger syrup and lime juice. Cover and shake vigorously, or stir, until combined and chilled, about 30 seconds. (In general, by the time the shaker mists up, the drink is ready.) Strain into a chilled cocktail glass. Add twist and serve. 28 HOLIDAY 2018 MILLBURN & SHORT HILLS MAGAZINE 1 cup sugar 2 cups water DIRECTIONS • Remove the outer peel of the lemon with a vegetable peeler, taking care not to include too much of the bitter white pith. Finely chop the lemon peel and ginger in a food processor. • Transfer the lemon-ginger mixture to a medium saucepan, add the sugar and water and bring to a boil. Reduce heat and simmer, partially covered, for 15 minutes. Strain the mixture and cool. Cover and refrigerate for up to 1 week. 2 scallions, finely chopped 1 ⁄ 3 cup all-purpose flour 2 large eggs, lightly beaten 1 teaspoon salt ½ teaspoon black pepper ¾ cup vegetable oil DIRECTIONS • Stir together potatoes, scallions, flour, eggs, salt and pepper. • Heat oil in a deep, 12-inch nonstick skillet over moderately high heat until hot but not smoking. Working in batches of 4, spoon 1/8 cup potato mixture per latke into oil and flatten to 3-inch diameter with a slotted spatula. Reduce heat to moderate and cook until golden, about 1 ½ minutes on each side. Transfer latkes with a spatula to paper towels to drain.
