Συνταγές της Μέσης Ανατολής MOLOKHIA Molokhia is a delicious main dish that is served in all Middle Eastern countries. It is unknown (as raw material and also as food) in Europe, known only to the Greeks of Egypt. It is a plant, which we encounter in two forms: fresh molokhia and dried. In this recipe, dry molokhia was used, which can be found in shops with traditional Arabic products. INGREDIENTS: 500 g molokhia 3 chicken breasts 500 g rice 100 g vermicelli noodles 1 glass of lemon juice ½ garlic clove 100 g of almonds, 100 g of pine nuts olive oil, coriander, 4 instant stock cubes salt, pepper METHOD: Molokhia: Wash throughout the molokhia. Soak it in a bowl of water and let it rinse in the water for 10 minutes. Chop the chicken breasts into small cubes. Heat olive oil in a saucepan. Add and sauté the chopped chicken. Strain the molokhia and add it into the saucepan with the chicken. Finely chop the garlic and pour it in the saucepan. Add 2 instant stock cubes, salt, pepper, coriande r and 1 glass of water. Add the lemon juice and cook until the molokhia absorbs all the water. Rice: Heat olive oil in a saucepan. Add and sauté the vermicelli noodles. When sautéed, add 2 glasses of warm water, 2 instant stock cubes, salt and pepper. Rinse the rice with cold water, strain it and add it in the saucepan. Lower the heat and let it cook for half an hour. When ready, remove the saucepan from fire. Roast the almonds and the pine nuts. When ready, use them to garnish the rice.
