Συνταγές της Μέσης Ανατολής
KUBBA
Kurdish recipe from Iraq.
INGREDIENTS:
1.5 kg Sheep Meat
600 g minced meat (beef)
1 L of Cooking Oil
200 g Tomato Paste
Chili Powder
Salt, pepper
600 g Rice
600 g Bulgur
1 kg Tomatoes
600 g Eggplant
600 g White Onions
4 Cucumbers
1 Bundles of Parsley
1 Cabbage
3 lemons
1 lettuce
100 g Fine Grains
METHOD:
Cut the meat, the onions (keep some for the salad), the eggplants and
the parsley into small pieces. Mix them all together in a big bowl with
salt-pepper and chilli powder. Fry this mix with a little bit of oil. Add
the minced meat, the bulgur and the fine grains to this bowl and then
create many small balls of this mix. Make a little hole in every ball and
fill it with a piece of fried mixed meat. Prepare the tomato soup. Add
the tomato paste and the water in a pot and after it starts boiling, add
the small kuba balls one by one and we boiled them for 2 minutes in
low temperature. For the salad, we chop all the vegetables in in thin
layers and put them in a bowl with the juice of the lemons and olive oil.
Boil the rice and serve it with the salad as a side dish with the kuba
balls.
