Συνταγές της Μέσης Ανατολής
TASHREEB
It is a popular Kurdish dish from Syria.
INGREDIENTS:
1 kg Chicken
1.5 kg Sheep Meat
25 g Hot Peppers
0.1 L Olive Oil
300 g Onions
500 g Rice
100 g Noodles
200 g Parsley
300 g Salad
300 g Mixed Bell Peppers
100 g Margarine
400 g Tomatoes
300 g Cucumbers
1 pack of Pita Bread
1 lemon, Salt
METHOD:
Cut the meat in chunks. Cut the peppers in slices. Boil water in a big
pot, add the meat chunks until they start to become tender. Add the
peppers, noodles and parsley to the soup. While the stew is simmering,
slice the cucumber, 2 kg of tomatoes and the salad and mix it in a big
bowl. Just before the meat is tender add the rest of the tomatoes in
chunks to the soup. While the meat in boiling, roast the pita breads.
Finish the salad by adding a dressing with lemon, salt and olive oil.
Finally serve the roasted pita bread on plates and pour the stew over
it.
VARIATION:
Boil the whole chickens until they are tender. Take the chicken out and
fry it in vegetable oil. While the chicken fries, cook the rice and add
spices and vegetable to it. Press the fried chicken with the rice and
vegetable filling.
