Συνταγές της Μέσης Ανατολής
The following recipe was prepared by Mr. Rasoli Nastratullah, 35 years
old, hosted in Diavata Open Centre of Temporary Reception.
NAAN BREAD (UZBEKI BREAD)
It is the traditional bread of Afghanistan, which can be easily prepared
and baked at home. It is served for breakfast with eggs, with butter and
jam or with any other main dish of the Afghan cuisine.
INGREDIENTS:
2 kg plain flour
1 sachet of dry yeast
250 g of white and black sesame seeds
Water
METHOD:
Mix the dry yeast with half a glass of water, until it dissolves well.
In a bowl, add 1.5 kg of flour, along with the yeast, and gradually add
water and the remaining amount of flour, until it becomes slight dough
and does not stick to your hands.
Knead for a long time to get the dough to the desired result.
Divide the dough into 12 parts.
Then cover the dough to rise.
Once raised, knead the dough parts lightly and shape the breads
according to the size you like. Then, sprinkle them with the sesame
seeds.
Score the bread surface with a fork and bake it in 200οC until cooked
and golden brown. Breads should be baked one by one, separately.
