Συνταγές της Μέσης Ανατολής

It is one of the most popular dishes in Afghanistan and it is the national-
traditional dish of Afghan people. The dish can be cooked with lamb,
chicken or veal. It is also popular in other countries, such as Saudi
Arabia. They often serve it at weddings and formal, special events and
not as an everyday life dish.
INGREDIENTS:
2.5 kg basmati rice
3 kg lamb leg
1 kg black raisins
1.5 kg carrots
1.5 kg onions
300 g almonds
sunflower oil
thyme
salt
ground pepper
METHOD:
Chop the carrots into thin match stick pieces. Heat the oil in a deep
pan. Place the chopped carrots into the hot oil and fry until nicely
browned. Add and fry the raisins and the almonds.
In a pressure cooker boil the lamb, along with peeled onions. Add
thyme, salt and pepper.
In a pot, boil basmati rice (in proportions as listed on the package).
To serve, use a big pot and place all ingredients in layers. Place the
cooked lamb in the bottom of the pot. Above place the boiled rice. For
the last layer, place the fried carrots, raisins and almonds. Mix and
serve.
