Συνταγές της Μέσης Ανατολής
TABOULEH
Tabouleh is one of the most favourite Arabian salads. Tabouleh always
accompanies dishes such as falafel, hummus or baba ghanoush
salad. With few variations, it has become a renowned recipe all over
the world. Tabouleh is mainly a parsley salad mixed with a smaller
amount of bulgur. Since it is about a very breezy and light salad, it
pairs perfectly with fried meat and delicacies with intense flavours and
spices.
INGREDIENTS:
1 bunch of fresh parsley
1 lettuce
1 fresh onion
2 tomatoes
½ bunch of fresh spearmint
1 glass of fine bulgur
½ glass of lemon juice
olive oil
salt
pepper
METHOD:
Soak the bulgur in cold water to inflate. When ready, drain very well
and set aside. Finely chop all vegetables into tiny pieces. Place all
finely chopped vegetables in a large bowl. Add the strained bulgur.
Pour olive oil, lemon juice and salt. Mix thoroughly and serve. For best
results, cover the tabouleh and refrigerate for about an hour. Then
transfer to a serving platter.
